Who Loves Potato Pancakes?
I do! And, well, doesn’t everyone? When I think of “Amish food,” I think of potato pancakes first. So, here’s a recipe that makes use of leftover mashed potatoes. It’s a snap to make and smells heavenly as it cooks. Enjoy!
3 cups mashed potatoes
2 eggs, slightly beaten
¼ cup flour
5 T. milk
Salt and pepper to taste
Mix together all ingredients and fry in a skillet well-greased with oil or a combination of oil and butter.
