Mamm’s Potato Salad – Amish Recipe
Mamm’s Potato Salad
Ingredients:
- 2 heaping quarts shoestring potatoes, cooked in jackets and peeled
- 9 hard-boiled eggs, chopped
- 1 1/2 cups celery, diced
- 1 small onion, diced
Dressing Ingredients:
- 2 tablespoons mustard
- 1 tablespoon salt
- 2 cups mayonnaise
- 3 tablespoons vinegar
- 1/3 cup milk
- 1 1/3 cups sugar
Directions:
Put potatoes, eggs, celery, and onion in large bowl.
Mix dressing ingredients and pour over ingredients in bowl.
Toss gently to combine and refrigerate until ready to use.
Yield: 6-8 servings
