Overnight Breakfast Bars
Ingredients:
- 1 1/4 cups flour
- 1 1/2 cups old-fashioned oats
- 2 tablespoons flax meal (optional)
- 1 teaspoon baking powder
- 1 tablespoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup sugar
- 1/2 cup brown sugar
- 2/3 cup butter, softened
- 2 eggs
- 1 1/3 cups buttermilk or plain yogurt
- 2 medium apples, peeled, cored, and chopped
Toppings Ingredients:
- 1 cup chopped walnuts or pecans
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Directions:
Combine flour, oats, flax meal, baking powder, baking soda, salt, and cinnamon; set aside.
In a large mixing bowl, combine sugars and butter; beat well.
Blend in eggs and buttermilk into the large mixing bowl.
Put mixer on low and gradually add in flour mixture, beating just until blended.
Fold in apples.
Pour into a greased 13 x 9-inch pan.
For topping, combine walnuts, brown sugar and cinnamon in a separate bowl. Sprinkle evenly over batter.
Cover and refrigerate overnight.
The next morning, preheat the oven to 350°.
Uncover pan and let stand for 30 minutes.
Bake 45 minutes, or until toothpick comes out clean.
Yield: 9-12 servings
